  1. One of my favorite salads is radicchio with a hard-boiled egg (still warm) and a dressing made of pumpkin-seed oil, vinegar, salt, and pepper. You could also substitute egg for a boiled potato (which I do more these days, when I’m trying to eat vegan whenever I can). I know you said you’re trying to get away from just simple salads, but sometimes that’s all that one has time for, so I thought I’d share.
